Yes, I realize today is the big football game in which everyone is watching the 49ers vs. Giants. I do enjoy watching football but that's more of my boyfriend's thing and since he is 2 1/2 hours away from me, well I am absolutely bored and have no desire to watch it!
But what I did do today was try out a Pumpkin Protein Recipe I stumbled upon on youtube. You can watch the original recipe video here although I changed how I made mine just so slightly.
I have made protein pancakes in the past which had much more protein in them, but I couldn't get mine to come out very fluffy. Mine ended up being very dense. This recipe does make fluffy pancakes though.
The other great thing about this recipe is that due to the amount of protein in it, it is a very intermittent fasting friendly and actually friendly for any cutting (weight loss) diet.

Protein Pumpkin Pancakes Recipe:
1/3c egg whites
1/3c canned pumpkin
1/3c quick rolled oats (grind them in a food processor to make an oat flour)
1/2 scoop of your favorite protein powder (I used Optimum Nutrition Nitrocore 24 Sensational Cinnamon Roll)
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp vanilla
1/2 tsp baking soda
1/2 tsp baking powder
1 stevia packet or tsp stevia if loose
Makes 2 pancakes about 5"-6" in diameter
294 cals
23g protein
42g carbs
4g fat
