So last night I am done eating dinner and still have about 200 calories to spare and in need of getting more protein in. I was craving something sweet and thought about having a Fiber One bar but I knew that wouldn't help me much with my protein goals. Thought about looking up some protein cookie recipes and giving it a go but I didn't have any raisins in the house. So oatmeal raisin cookies were out of the question. I was looking around the kitchen to see what I could work with. Well, I have oats and apples. there has got to be a way to incorporate them both! So, I got busy baking in the kitchen and my first batch was ok but still needed more spice in my opinion and it needed more fluffiness. it was tasting a bit too dense.
So today, since it's freezing in the house and outside, I decided to give it another go at my recipe. Voila! It worked! These cookies are fluffy (don't let the photo fool you) and they taste naturally sweet.

Protein Oatmeal Apple-Spice Cookies
(Makes 12, 3" cookies or 6 large cookies, just double the nutrition if you opt for making large ones)
1 cup quick oats
4 scoops cinnamon roll protein powder (recommend using Xtreme Formulations Cinnamon Roll or Optimum Nutrition Nitrocore Sensational Cinnamon Roll)
1/2 cup applesauce (cinnamon applesauce recommended)
1/2 cup egg whites
1 tbsp. Stevia or 4 Stevia single serving packets (can use Splenda)
3 tsp honey
1 tbsp Plain Greek Yogurt
1 Fuji apple (peeled and diced into small chunks)
2 tsp Cinnamon
1 tsp Nutmeg
1/2 tsp baking powder
Directions: Preheat oven to 350°F. In a medium bowl combine the oats, protein powder, stevia, cinnamon, nutmeg, baking powder and mix well. Add the egg whites, applesauce and yogurt. Once mixed, add the apples. Form drop cookies onto an un-greased pan and bake for 10-15 minutes. Edges should be golden when ready. Cool on a cooling rack.
Nutritional info for 1, 3" cookie:
110 calories, 10g protein, 14g carbs, 2g fat
Depending on the protein powder you use the calories and protein may increase or decrease.

Storing these cookies
Ok, so I have been making these cookies the past two days to tweak this recipe, which means I have to store some of them. These do not do well in an air tight container. They seem to "sweat" a little. So, I froze mine in bags in small freezer bags. When I am ready to enjoy them, I will nuke them in the microwave or reheat in the oven.
Make Now, Bake Later
These cookies taste the best coming straight from the oven so if that's your intention to always eat them straight from the oven, then you may want to bake only as many as you intend to eat and then place the rest of the mixture in an air tight container in the fridge until you are ready to bake a few more.
You can also freeze the mixture as a log and then take out the log and cut off the amount you wish to use to make 1-2 cookies at a time. Just take a sheet of freezer paper and pour the mixture at one end of the paper and then roll it like a log and then twist the ends of the wax paper and then take some seran wrap and wrap over the wax paper log. Or you can drop the the wax log into freezer ziploc bags too. See photo below.

When ready to use again, take out your log and slice off dough for the number of cookies you wish to make.
